One of the most common cliché of celebrating teacher appreciation is to actually give our teachers some apples. Now, we all know why apples are very significant for teachers as gifts, but wouldn’t it be more suitable if we prefer becoming more creative?

Here are two delicious apple recipes in transforming these -teacher fruits into incredible teacher appreciation week ideas.

Apple Recipe #1: Candy Apples
Ingredients:

¢ 6 apples
¢ 6 wooden or bamboo skewers
¢ 1 1/2 cups granulated sugar
¢ 1/8 tsp. cream of tartar
¢ 1/3 cup water
¢ 1/2 tsp. fresh lemon juice
¢ 6 whole cloves
¢ 1 tsp. red food coloring
¢ cinnamon red hot candies, crushed (optional)
¢ flaked coconut or chopped nuts

Procedure:

  • Spray a cookie sheet with non-stick spray, brush with vegetable oil or line with a silicone sheets.
  • Remove stems from apples. Insert a skewer into each apple through the stem end.
  • In a heavy saucepan over medium heat, dissolve the sugar with the water and cream of tartar. Add lemon juice, cloves and crushed cinnamon red hots (if using).
  • Add red food coloring. Boil the mixture, without stirring, until the temperature reaches 310°F on a candy thermometer or until the sugar mixture reaches the hard crack stage.
  • Remove saucepan from heat. Dip apples into the syrup, turning to coat. If a coconut or nut coating is wanted, roll the apples in the coating while still warm.
  • Leave the apples on the cookie sheet to cool. Makes 6 apples.

Apple Recipe #2: Caramel Apples
Ingredients:

¢ 1 1-pound box dark brown sugar
¢ 1 cup (2 sticks) unsalted butter, room temperature
¢ 1 14-ounce can sweetened condensed milk
¢ 2/3 cup dark corn syrup
¢ 1/3 cup pure maple syrup
¢ 1/2 teaspoons vanilla extract
¢ 1 teaspoon robust-flavored (dark) molasses
¢ 1/4 teaspoon salt
¢ 12 sturdy lollipop sticks or chopsticks
¢ 12 medium apples
¢ Assorted decorations (such as chopped nuts, chopped raisins, mini M&M’s and candy sprinkles)
¢ Equipment needed – one accurate candy thermometer

Procedure:

  • Combine sugar, butter, condensed milk, corn syrup, maple syrup, vanilla, molasses and salt in a thick-bottomed 2 1/2 or 3 quart saucepan. Stir with a wooden spoon on medium-low heat until all the sugar dissolves. There should be no grittiness (sugar crystals) when you test by rubbing a little of the caramel between your fingers. Brush down the sides of the pan with a wet pastry brush to dissolve any sugar crystals that might form on the pan sides.
  • Attach a clip-on candy thermometer to the pan and cook caramel at a rolling boil until the thermometer reaches 236°F, stirring constantly and slowly with a wooden spatula. Continue to occasionally brush the sides down with a pastry brush. Carefully pour caramel into a metal bowl. Cool until the temperature lowers to 200°F, at which point you are ready to dip the apples.
  • While the caramel is cooking/cooling, prepare a large baking sheet, covering it either with buttered aluminum foil. Insert a chopstick or sturdy lollipop stick into each apple, about 2-inches, top down, into the apple core.
  • When the caramel has cooled enough for dipping, dip the apples in, one by one, by holding on to the stick, and vertically lowering the apple into the caramel, submerging all but the very top of the apple. Pull the apple up from the caramel and let the excess caramel drip off from the bottom back into the pan. Then place on the prepared foil. The caramel will pool a little at the bottom of each apple. Place into the refrigerator to chill for at least 15 minutes.
  • Once the caramel has chilled a bit, remove from the refrigerator and use your fingers to press the caramel that has dripped to the bottom of the apples, back on to the apples. Then take whatever coatings you want and press them into the apples for decoration. Return to the refrigerator to chill for at least one hour.

Funny Experiences Shared for Teacher Appreciation Day 2011

Did you celebrate Teacher Appreciation Day 2011 already in your country? Recently, the Philippines celebrated its Teacher’s Day and it was generally a success. Most students gave personalized gifts they made and bought to be given to their favorite teachers. Some parents also get to participate in the celebration by personally giving those gifts or giving them treats. It was a remarkable day for teachers to be recognized in such manner.

Now the part of the school is actually to implement programs to show teacher appreciation. And as part of the program, funny experiences among teachers may be considered.

I was substituting in my own son’s kindergarten classroom, and it happened to be his birthday. He told one of the children, and she asked me, -Is it really his birthday? I replied, -Yes, he was born six years ago today. The little girl looked at me in amazement. -You mean he was BORN on his BIRTHDAY? What a lucky boy!

(I was substituting a 2nd grade class and the kids were working on their math workbooks. A little girl came up to me and said she didn’t understand a page that said to write an addition and subtraction story problem. I asked her -What is a story problem? She hesitated a second and then said -It’s when something bad happens in a story. I smiled and told her it was the best answer I had heard in months.

In my first year in the business of substituting I found myself in an 8th grade US History class. The students sensed my -newness and let me have it, or so they thought. One boy walked to the window, opened it and threw his book out. The class roared, waiting for a response. I walked toward the window and the boy; he jumped out the window. A quick response of shutting the window and asking the class to carry on with the assignment worked in heading off problems. I then sent a note to the office and they handled the situation. I walked out of school that day and wondered if I’d be back. -I really like elementary school! The secret is to keep your sense of humor.

One of my first experiences in subbing was quite humorous (for me anyway). This was a 10th grade math class. I usually just stand in the back and talk with students. While waiting for the bell to ring, a young man approached me. He was a student in the class. He was very nice and very charming. Just as the bell was ringing, he asked me out on a date, not knowing I was the Sub. I just smiled and headed for the front of the classroom. I looked directly at him while I said, -Hi my name is Mrs. Wilson, and I’m your substitute teacher. His face turned bright red and never looked at me again. Needless to say, he was very quiet and well behaved after that!
